I remember the first time that I went to a PF Chang's. It was circa 2000 and I was in college, on Spring Break, in California. It seemed like such a novel idea to me - Modern Chinese food with a twist.
Smoked Swiss cheese and sauteed garlic mushrooms make a decadent grilled cheese you can make in less than 20 minutes! These days nearly every food imaginable has its own national holiday. I tend to think these celebrations are on the verge of absurd.
Just feed me lettuce all day.... So long as it's filled with sweet and spicy chicken, juicy mushrooms and crunchy carrots. This meal really makes a fabulous lunch, and it can also be served cold as a kind of chicken salad (Chris enjoyed his at work).

A while back, while relaxing with my wife, I started on my bi-hourly foodie rant and was detailing my disdain for processed cheese. When she discovered I viewed American cheese in the same light as edible Play-Doh she looked at me with a face typically reserved for your first meeting with an extraterrestrial.
Wait, we have a meat grinder? My husband, who can no longer claim I'm a kitchen minimalist, was in disbelief. Well yes, technically we had received the KitchenAid meat grinder attachments, I explained, but this wasn't like having a huge meat grinder that would take up space and that we'd never use.
These caramelized ham & swiss sliders seem to have been a regular in our dinner rotation the last few months. We can't seem to get enough of them. They are seriously the bomb! They are one of those things you could eat yourself sick with because they are so good it's hard to stop at just one.
Let me set the scene for you. My husband and I decided to go out to dinner one night at a local bar we like. They're known for their bar food (burgers, fries, etc.) as well as my husband's favorite: a pint of Rainer beer in a can.
Spinach makes a grilled cheese healthy right? I mean it trumps EVERYTHING right? It's spinach. Well I'm going with yes - which makes this a healthy grilled cheese. Either way you are going to devour this sandwich. It's sort of a must. What I love about this grilled cheese: It tastes a lot like spinach artichoke dip.
Life is so crazy at our house right now with baseball which explains the no post on Wednesday, sorry. I had good intentions, but it just didn't happen. On top of games every night, I am the league secretary and I do all the shopping for our snack shacks.
