Skinny Baked Broccoli Macaroni and Cheese | Skinnytaste
Cheesy macaroni and broccoli are topped with bread crumbs and baked to perfection. Kid friendly, vegetarian and comfort food at it's finest. I first made this back in 2011, and it has since been very popular. Last week I made it again and updated the photos, I forgot just how good this is!

Baked Empanadas | Skinnytaste
I love empanadas!! Empanadas are delicious turnover pastries stuffed with picadillo, crab, guava, cheese or anything you desire. All latin countries have different versions of empanadas with variations of dough and fillings. Some are fried and some are baked. Personally I love them fried but they are terribly fattening so this is my low point empanada version of a personal favorite.

The skin of the potato contains all the fiber, therefore my skinny potato skins are not only tasty appetizers, they are also good for you! These make great appetizers or you can serve them as a side dish.

Creamy Parmesan Spinach Dip | Skinnytaste
Classic full-fat spinach dip got skinny by using low-fat ingredients and getting most of it's flavor from Parmigiano Reggiano. I love using crudites as low-carb dippers such as raw broccoli, celery or carrots, but I usually serve this with reduced-fat crackers or baked chips for my guests.

Hot Spinach Dip | Skinnytaste
This lightened up cheesy spinach dip is perfect for any gathering. You can double or triple the recipe as needed. My oldest daughter Karina loves this dip. I often made this for her as an after school snack. You can prepare this a day ahead and bake as needed.
